MXCO in the Spotlight with Godare and Aftonbladet
MXCO recently had the honor of welcoming Godare, Aftonbladet’s food site and TV channel, to our restaurant near T-Centralen. The visit celebrated authentic Mexican flavors and gave us the opportunity to share our passion for Mexico’s culinary heritage with a wider audience.
During the visit, our very own José Manuel Cruz Martinez demonstrated how to make quesabirria tacos, a dish that combines spicy, tender birria meat with golden, crispy tortillas fried in their own fat. The tacos were served with consomé, a flavorful broth that elevates the entire experience. “This is a true explosion of flavors,” promised José.
José shared his journey from Mexico City to Stockholm and how his background as a chef in Mexico’s capital has influenced his culinary philosophy. He emphasized the importance of authentic ingredients and techniques, such as using corn tortillas made with methods dating back to the Mayan Empire. “Corn is the heart of the tortilla, and the tortilla is the heart of a perfect taco,” José explained.
The visit resulted in an inspiring article and TV feature on Godare, where we had the chance to share tips on traditional fillings like carnitas, barbacoa, and tinga, as well as the perfect accompaniments: salsa verde, guacamole, and chili sauce—all designed to create a complete taste experience. We also showcased classic Mexican beverages that complement the food. One glass held water flavored with hibiscus flowers, another with tamarind and ginger, and the third a milk-like drink, horchata, made from Mexican rice milk, cinnamon, and sugar. These drinks balance the heat and saltiness of the tacos. José explained, “If it were 11 PM and we were heading out to dance, you’d get a Margarita. Tequila, lime, and sweetness are the perfect combination for tacos.”
Collaborating with Godare and Aftonbladet was a fantastic opportunity for us at MXCO to showcase our commitment to authentic Mexican flavors.
